Hi Jordan! I hope you're thriving. 🙂 After reviewing the record picker support article, I wonder if attempting to filter by too many different variables is causing this to happen. Specifically, it says the "viewer record only" will only show records related to the interface viewer if their name (or a group they belong to) has been added to a user field in the underlying base. You can specifically set one, and only one, user field for this option. So, in your case, if the user is already set up in the collaborator user group, there wouldn't be a need to add multiple filters for the "viewers record only," as they should automatically show up if they are correctly assigned to the user group.
Alternatively, your workaround of specific records could also work, as that option will allow for multiple conditions and filters.
Also, unless you are assigned to the same group/records, you will not see the records on your end when testing the viewer's record-only option!
It's hard to diagnose over a thread 😂, but those are my initial thoughts. I hope this helps, and of course, feel free to share any other thoughts/questions!

You might be onto something.. but it still looks like it's not observing the expected behavior even based on the support article.. here's the specific breakdown in detail, might help see where I am missing something 🙂
So here's the interface.. I have remove all filters, the only one is the one below -

Now, here's a snippit of the record and that field. You'll see I've set it to a user group rather than putting in each person on my team into that field.

I am a member of that user group.. FOX Weather - Weather Presentation -

But the record still doesn't show up in my view.
Now, if I add myself as an individual contributor, like this -

Then I am able to see the record in the view. It just doesn't seem to want to identify me as part of the user group. I had a couple other members of my team test this, and they had the same behavior where it wouldn't show unless I added them individually. Just an odd one!
